So, I've had this bottle of rum sitting in the cupboard for years when I decided to try something I read on the internet about making your own Kahlua. Store bought Kahlua is expensive so I thought "what the heck" I'll give it a try. The recipes are all very similar so I just grabbed one and went for it. The trickiest part is knowing the right time to add the rum. Here's the scoop:
- 1 cup dry instant coffee (Don't use freeze dried)
- 2 cups water
- 3 1/2 cups sugar
- 2 cups rum
- Few drops of vanilla extract
Bring water to a boil in large pot, remove from heat and add the instant coffee and sugar & stir like crazy. Let the mixture cool for at least 10 minutes and add the rum, stirring as you do.
When finished find any air-tight containers to store your hootch. Glass jars are best. Let your Kahlua sit for a month before enjoying. You'll be amazed how close it tastes to store bought!
