I just made the yummiest baby food for my 10 month old twins. As most of you know I made the commitment to make baby food for all three of my babies. Many people told me that there's no way I'd be able keep up with twins while working full time. I admit it has been harder and I have caved to the jars of Gerber from time to time. Especially when we feed the babies meat. It is so much harder to make baby food meat and keep it from drying out and tasting yucky.
The reason I like making my own baby food is because I like the idea of feeding my baby food that I would eat myself and I have to say the food I made today I am definitely making for myself and the rest of my family.
For babies 10 months and up. Here's what you need:
2 baby red potatoes1/2
1 large or 2 small carrots
1 small onion
1 clove of garlic
2 Table spoons of olive oil
1/4 cup of water
1/4 teaspoon black pepper
1/4 teaspoon oregano
1/4 teaspoon basil
1/2 pound of frozen spinach
Shredded cheddar cheese
What to do:
Preheat oven to 375. Wash and cube baby reds place in the bottom of a glass baking dish. Clean carrot and cut into wedges place in baking dish. Cut onion into pieces and put in baking dish. Mix garlic in with the potatoes, carrots and onion. Pour olive oil over all of this and sprinkle pepper, oregano, and basil over the top. Put in oven and bake for 30minutes.
Sprinkle cheddar cheese over the top and bake another 10 minutes.
Put 1 cup of water in a small sauce pan. Put half a package of frozen spinach in the pot and bring to a boil. Cover and lower temp to medium. Simmer for 7 minutes.
Make this into baby food:
Grab your baby bullet or blender and blend the potato/carrot bake with the spinach. At this point the blend does not need to be smooth, but should not contain large chunks.
This is delicious!
Make some to feed right away and you can freeze it.
Standard rules apply: fridge life 3 days, freezer life 1 month,2 days to thaw in the fridge, and toss left overs.
