This recipe epitomizes the title “Healthy-Ish”. I’m not gonna sit here and say “this is healthy” BUT…there are a lot of other worse things out there for you. My fiancee was out of town last week, so I made this two nights in a row! It was that good! Here’s what you’ll need (notice how short the list is)
-Ground beef of your choosing, amount dependent on how many people your feeding (or how hunger you are). I find 80/20 is the best for burgers. Just enough fat to keep everything in place!
-Spring mix, spinach, lettuce or the greens of your choosing
-Tomatos and mushrooms (or any veggies you wanna add) – should also have a veggie or two on the side for a full meal
-Cheese (my go-to’s are colby jack or pepper jack)
-Whole wheat tortilla’s (again this a your choice thing, corn, and flour would also work)
-Hot sauce (if you like it spicy like me)
-Seasoning (this is all prefernce, I used a spicy grilling seasoning – I wouldn’t do any less than salt, pepper, and garlic)
-very small amount of butter
I cooked this bad boys in my cast iron skillet, I like medium/medium-rare. Heat the pan, hit it with some cooking spray, and add your butter. Do the burgers for 2-3 minutes on each side. When the burgers are down, drain some BUT NOT ALL of the grease. I think shred the cheese, assemble the quesadilla and cook it in all those juices (so good). This only has to cook till the cheese is melted and when you have a nice char on it. Slice everything else, cook up those veggies and sides, and you’re good to go!
