Boneless/skinless chicken thighs work best for this dish, though, use about a pound of what you’d like. Either homemade marina sauce or your favorite jarred sauce, diced onion, 1 red and 1 green bell pepper, diced, 1 package of mushrooms. Italian seasoning, garlic, salt/pepper, crushed red pepper. Season and cook chicken, in a cast iron skillet for best results. In a Dutch oven pot or large pot, while chicken is cooking, saute veggies with garlic for about 4-6 minutes. Add seasoning. Then add tomato sauce. Simmer for about 5 minutes. Once chicken is cooked through, add to pot with sauce and veggies, and simmer for another 10 minutes. Serve with your favorite pasta
