Let’s be honest…everyone needs a good chicken fried rice! This recipe is the epitome of “Healthy-ish” it’s not that healthy, but my fiancee and I have put a healthy spin on it! Give it a whirl and let us know how it turned out!
Chicken Fried Rice
Ingredients
Sesame oil (buy this. You’ll use it more than you think!)
Ground ginger (and this!)
Soy sauce
1lb chicken breast or thighs, diced
Frozen or canned peas and carrots
2 cloves minced garlic or 2 tsps garlic powder
3 green onions – sliced
2 eggs
1 cup rice (long grain, brown)
Salt/pepper to taste
Directions
- Cook rice according to package instructions.
- In a large skillet, add oil and chicken. Season chicken. Cook over medium high heat until chicken is cooked.
- Remove chicken from pan. Add peas and carrots to pan, season. Cook for 2 minutes. Add garlic.
- Push veggies to side. Beat eggs in a bowl and add to pan. Cook until eggs are scrambled.
- Add chicken back to pan, along with rice, soy sauce and green onions. Stir to combine.
