Hey guys! So I’m still navigating myself around this gluten intolerance, trying to cut it out when I can. It’s actually been nice when it comes to bread, the gluten free stuff is hella expensive so I just haven’t been eating it. I prefer finding other ways to get carbs, like rice and other things. I loved eating breakfast sandwiches in the morning, so I’m trying to recreate the magic with an open-faced rice cake sandwich.
Here’s what you’ll need:
-2 hard boiled eggs
-Spring mix
-1 rice cake
-Hot sauce
-Avocado
-Everything bagel seasoning
-Ham or sausage
-One of two fruits of your choosing
-Coffee, water, OJ or a combo of all three
-Yogurt or applesauce
So I am lucky enough to have an amazing wife who prepared my breakfast this morning, all I had to do was make my coffee! So cut me up some strawberries and banana. I had a little cup of applesauce along with the sandwich. First she put down cream cheese, followed by spring mix, some sliced avocado, couple fried slices of ham, hot sauce, 2 hard boiled eggs sliced in half, topped with everything bagel seasoning.
