This recipe came to be, almost by accident…one very happy accident lol. If you like Stuffed Peppers, there’s a pretty good chance you’ll like this twist on it! Super easy, and it makes a lot of food!
Ingredients
1lb ground beef (or sub ground turkey, ground sausage)
½ onion
1-2 bell peppers, any color
½ tsp paprika
1 tsp italian seasoning
1 clove minced garlic or 1tsp garlic powder
2 small cans tomato sauce
1 tbsp tomato paste
½ cup rice
Salt/pepper to taste
Directions
- Boil water for rice. Once boiling, add rice. Cook according to package.
- Brown meat over medium heat in a pan with choice of oil along with onions.
- Add in diced peppers and seasonings. Cook for 3-5 minutes.
- Add tomoato sauce/paste
- Once rice is cooked, combine with meat mixture and sprinkle choice of cheese on top.
- If desire to bake, preheat oven to 350. Transfer rice and meat mixture to oven safe dish and bake until cheese is bubbly/browned (optional)
- Garnish with parsley (optional)
