Hey guys! So this is something that I’ve been doing as part of my lunch for quite a few years now. For my “main course” I usually do a salad, and then a jazzed up Rice Cake. You can find a recipe for those if you go back further into the healthy-ish blog.
For the salads, my fiancee and I by the prepacked ones from Aldi. They come with salad and all the ingredients to make it less boring, they also a wide variety of them. They say two servings, but we by spring mix to stretch them into 3 servings. We also add protein, whether it be nuts, a hard boiled egg, or even chicken. My fiancee doesn’t like it, but I like to add beets and cottage cheese sometimes.
This is just a super easy way to make a lunch a little less boring. We have the special salad containers, so it’s great for meal prep. I can get a whole weeks worth of salad done fairly quickly!
